Afternoon Tea at Calcot Manor - Year 9 Food Preparation & Nutrition
22 Year 9 students had a fantastic experience working with Calcot Manor to entertain 55 guests at an Afternoon Tea in The Barn at Calcot Manor Tetbury on Wednesday 28th June 2017.
It had all started way back in January when they were given the opportunity to apply in writing to Paul Sadler the Manager at Calcot and express why they should be selected. Each lucky and deserving student received a personal letter from Paul congratulating them on their selection, and from then on preparation work was carried out with great enthusiasm. Invitations to guests were produced, research in to the history of Afternoon Tea, as well as appropriate products and finally practising skills that would be essential on the day.
On arrival at Calcot the students with greeted by Paul and his team, given the necessary Health & Safety talk and then split in two groups which would swap between Front of House and working in the kitchen. It was then full steam ahead, with the Front of House led by Ollie Counsell being given a blank canvas to set up and decorate The Barn for the Afternoon Tea. Ella Light led the Kitchen Brigade in planning the food preparation. Teamwork was outstanding and they all worked with enthusiasm and a maturity beyond their years.
The Front of House team had to decide table layout and design, furnish the room and lay the tables to the high standards that Calcot expect. While they were given a free reign, Paul and his team kept a watchful eye and reinforced their motto of “quality and consistency”. Students were amazed at the use of a thumbnail to measure the correct distance of the cutlery from the end of the table!
In the Kitchen Matt the Baker impressed the students with his measurement of 100g – a big handful! As the students soon found out, their handful wasn’t necessarily 100g! All students were amazed by the scale and size of equipment and ingredient “bins”. They all got stuck in to making scones, chocolate cake, carrot cake, macaroons and sandwiches. Again “quality and consistency” was the name of the game!
Finally everything came together and the time was fast approaching for the VIP guests to arrive – parents, carers, Archway staff and fellow Year 9 students. The room was decorated beautifully, food carefully placed on the cake stands, Prosecco (adults only) and sparkling water carefully poured to welcome the guests. How proud we all were! A huge “Well done” to all Year 9 students, a big “Thank You” to Paul and the team at Calcot and the wonderful guests who truly were appreciative, very proud and catered for to the highest possible standard!
