Success on a Plate! Archway’s continued collaboration with Egypt Mill Hotel
After the hugely successful “Taste of India” event last year, Archway School Year 12 Food Science & Nutrition students and Egypt Mill Hotel, Nailsworth, repeated the partnership last month.
This time it was a “Taste of Italy” event. It was organised by Rob Aldridge Manager at Egypt Mill and myself, Food Specialist at Archway, to provide a real insight in to the hospitality and catering industry, while supporting key aspects of the Level 3 course. 50 guests were treated to complimentary wine and canapés on arrival, followed by a traditional 3 course Italian meal.
Under the guidance of new Head Chef Rory, new Banqueting Chef Alex and Patisserie Chef Sam, the students were immediately set to work on the preparation. Preparing fresh pasta and focaccia dough, vegetables for pasta dishes, salad vegetables for the gazpacho soup, sponge for the tiramisu and scallops, and figs and tomatoes for the canapés. Rory and Alex provided humour and fantastic tips along the way, with the students working accurately and efficiently to finish ahead of schedule. Four and a half hours of preparation later, the students had never seen so much food or worked so hard but had made really positive impressions on the Egypt Mill staff.
Ben, in charge of Front of House, then gave the students lessons on laying tables, preparing serviettes, serving drinks and generally creating a welcoming environment. It was all hands on deck to ensure cutlery was sparkling and positioned correctly, while fun was had ensuring the serviettes were shaped and stood up!
The long and tiring day flew by as students were then back in the kitchen completing final cooking and preparations for the guests’ arrival at 7 pm. Tips were given on plating up, portion size and how to serve. While nerves were evident, excitement and pride clearly took over as the students served canapés and complimentary wine before seating guests and serving the three course meal.
It was an unforgettable day with staff, students and guests all being complimentary and positive about a wonderful experience….

Part time work and apprenticeships were offered such was the high standard achieved, with several students now keen to embark on a career in the industry!
